Baked Potato Mice

Who could resist these gorgeous little
baked potato mice? They’re fun to
make and even more fun to eat!






You will need:
4 potatoes
1 tbsp oil
2 tbsp butter
5 tbsp milk
½ cup grated Cheddar cheese
salt and pepper
8 raisins
4 cherry tomatoes
small bunch chives
2 radishes
1 scallion

How to make baked potato mice

PREPARATION TIME about 30 minutes
COOKING TIME about 1 hour
serves 4
1) Preheat the oven to 400˚F
(200˚C). Prick the potatoes
with a fork. Brush them with
oil. Bake for 1 hour, or until
soft in the middle.
2) When cool enough to
handle, cut off the tops
and carefully scoop out the softpotato centers. You can throw
away the lids (or eat them).
3) Mash the soft centers with
butter, milk, and three-quarters
of the cheese. Add salt
and pepper. Put the mixture
back into the potato skins.
4) Sprinkle with the remaining
cheese. Broil the potatoes
for 2–3 minutes, until golden.
5) Decorate each mouse withraisin eyes, a tomato nose,
chive whiskers, radish ears, and
a scallion tail.
